Preheat oven to 200°C / 390°F.
Toss drumsticks with oil, salt, pepper, and seasonings. Place on a baking tray.
Roast 30–35 minutes until golden and cooked through.
Meanwhile, cook rice: combine rice + water/stock in a pot, simmer until fluffy (15 minutes for white, 30+ for brown).
Steam or boil carrots for 8–10 minutes until tender.
Serve drumsticks with rice and carrots like the budget boss you are.
8 chicken drumsticks (about 1kg / 2.2lb)
1 cup (200g / 7oz) rice (white, brown, or whatever’s in the pantry)
2 cups (480ml / 16fl oz) water or stock
3 large carrots, sliced (about 450g / 1lb)
1 tbsp (15ml) oil
1 tsp salt + pepper to taste
Optional: garlic powder, paprika, dried herbs
