Leftovers never looked so smug. This is what happens when yesterday’s beans (or cheese) get a second life. It’s the ultimate broke-as encore meal — fast, frugal, and actually tasty.

Preparation

  1. Warm flatbread in a dry pan (or toaster if you’re feeling lazy).

  2. Spread beans or scatter cheese inside.

  3. Fold, press lightly, and toast for 1–2 minutes until heated through.

  4. Eat it like you’ve invented the ultimate recession-proof quesadilla.

  • 2–4 flatbreads (store-bought or DIY: 2 cups / 250g / 8.8oz flour + 1 cup / 240ml / 8fl oz water + pinch of salt + drizzle of oil)

  • 1 cup (170g / 6oz) leftover beans (mashed or whole)

  • OR 1 cup (100g / 3.5oz) grated cheese

  • Optional: pinch of herbs, chilli flakes, or whatever scraps you’ve got
